Its high lecithin content is an essential part of our diet that not only emulsifies fat but speeds up and improves the digestion of fats by enzymes because the surface area is increased. Lecithin also aids our liver function, keeps the arterial lining free from cholesterol and prevents kidney and gallstones from forming. </p>
<p>Methionine, another key ingredient in eggs is essential in the formation of nucleic acid of the genetic material of every cell. It’s a powerful antioxidant, assists in gall-bladder function and detoxifies heavy metals and excess histamine levels from the body. </p>

<p>High quality eggs are rich in vitamins A and D, as well as choline for mental acuity in adults. Like the B vitamins, choline is a coenzyme needed for metabolism. Choline exists in all living cells, but is probably best known as a major part of lecithin&#8211;the emulsifier that keeps fats and cholesterol from clumping together in the blood. </p>
<p>Don&#8217;t believe (even the doctor) if he/she tells you that eggs cause cholesterol.  Research has shown from the beginning that blood cholesterol levels has nothing to do with the cholesterol in the food that we eat. Rather, we increase cholesterol due to stress or by eating refined processed flour, sugars and fats. The fact is, eating eggs helps reduce cholesterol because of the lecithin content. </p>
